Soy causes about 9% of food allergies. It is a “hidden allergen”, because many foods contain soy but do not declare it. Soy protein can be in lecithin (E 322), emulsifiers, binders, vegetable protein, vegetable fats or stabilizers. This kit is based on real-time reverse transcription PCR to detect soya.
